Mango Malpua- Popular Indian Dessert

Summer are known for the abundance of invigorating fruit recipes that are prepared at home to beat the heat.Mango is one such fruit that is versatile even beyond our imaginaion. There are too many recipes we usualy prepare from mango. But today I want to share one of my fevorite recipe of mango dessert , which is ‘Mango Malpua’. For those who don’t know what ‘Malpua ‘ is- Malpua is a pancake served as a dessert  or a snack originating from the Indian subcontinent. The batter for malpua is normally prepared by flour, and water , milk, coconut,  sometimes crushing ripe bananas also used. Then deep fried in ghee or oil, and served hot after  dipped in sugar  syrup  after they are fried . Now talking about todays recipe here I am using wheat flour and semolina  instated of  refined flour . Besides I am using organic jaggery in place of sugar for making syrup.The main motto behind this  healthy twist is that , so that every body can enjoy it without any guilt. So here the recipe is

Watermelon Halwa

But today I want to share one of my fevorite recipe of Watermelon , which is ‘ Watermelon Halwa’.
For those who don’t know what Halwa is – it’s an Indian pudding which  could be made using grated root vegetables (like carrot, beetroot etc.), any kind of flour (like whole-wheat, all purpose flour, gram flour etc.) or using some grains (like semolina, couscous, barley etc.)

Anyway Watermelon halwa i.e tarbooj halwa is made using the rind of the watermelon which usually end up in the bin , not from the pink flesh. The white portion of the melon is nutritious but lacks taste so we often discard it,but here I am using this rind use it to make a delicious dessert .

Cooking the rind not only helps you reduce waste but also it gaves lots of nutritional benefits such as

watermelon rind is that it’s a rich source of fiber, which helps to maintain regular bowel movements and may help reduce the risk of developing diseases of the colon.Besides fiber fill you up faster, helping achieve and maintain a healthy weight.
watermelon rind also contain L-citrulline, a substance called a non-essential amino acid which  citrulline supplements improve oxygen delivery to muscles, potentially improving exercise performance.

Some research also has shown  watermelon rind supplements are able to help obese adults control their blood pressure ,also help to reduce  cholesterol and blood sugar levels.

Ingredients

  1. 1 medium sized Watermelon rind
  2. 3-4  tbsp  Ghee / Clarified Butter
  3. 1 tbsp  Semolina /Sooji
  4. 1 tbsp  Besan /gram flour
  5. 1/2 cup  Brown Sugar / Normal sugar
  6. 1/2 tsp – Cardamom powder
  7. 1 cup –  Coconut Milk / Normal milk / or any plant based milk
  8. A handful of dry fruits and nuts for garnishing

 

How to Make



  • Take the rind of water melon, peel the  dark green part deeply so that the white skin underneath shows.


  • Cut  the rind into small pieces. Put them in a grinder and make a puree.

  • Then, place a deep-bottomed pan on medium flame and heat ghee in it. 
  • Once heated, add the besan and sooji, roast on low flame till it turns brown or till the fragrance of besan and sooji starts coming. It should take around 2-3 minutes.




  • Add the watermelon puree and stir on medium to high flame till the water dries up.

  • Next, add  brown sugar, and stir it again .

  • After 10 minutes or so of adding the watermelon puree , pour coconut milk and cook till the mixture is mix well.

  • Add cardamom powder and stir it yet again for another few minutes.

  • Once done, transfer in a serving dish and serve hot garnished with chopped dry fruits.
