Mango Malpua- Popular Indian Dessert

Summer are known for the abundance of invigorating fruit recipes that are prepared at home to beat the heat.Mango is one such fruit that is versatile even beyond our imaginaion. There are too many recipes we usualy prepare from mango. But today I want to share one of my fevorite recipe of mango dessert , which is ‘Mango Malpua’. For those who don’t know what ‘Malpua ‘ is- Malpua is a pancake served as a dessert  or a snack originating from the Indian subcontinent. The batter for malpua is normally prepared by flour, and water , milk, coconut,  sometimes crushing ripe bananas also used. Then deep fried in ghee or oil, and served hot after  dipped in sugar  syrup  after they are fried . Now talking about todays recipe here I am using wheat flour and semolina  instated of  refined flour . Besides I am using organic jaggery in place of sugar for making syrup.The main motto behind this  healthy twist is that , so that every body can enjoy it without any guilt. So here the recipe is

Beet Root Sooji Halwa

Being an Indian and a sweet lover , every weekend,after the early dinner I tried to prepare some kind of dessert.In this situation I often prefer to cook some kind of halwa.

 For those who don’t know what Halwa is – it’s an Indian pudding which  could be made using grated root vegetables (like carrot, beetroot etc.), any kind of flour (like whole-wheat, all purpose flour, gram flour etc.) or using some grains (like semolina, couscous, barley etc.)

 Anyway, Beet halwa is a quick and relatively healthy dessert to have as beetroots are a great source of fiber, folate (vitamin B9), manganese, potassium, iron, and vitamin C. Beetroots and beetroot juice have been associated with numerous health benefits, including improved blood flow, lower blood pressure, and increased exercise performance.So to have beetroot in regular basis will help you to maintain healthy lifestyle.

Besides it gaves a rich pink colour to your dish and also contribute in sweetness.

Ingredients:

·       1 cup Sooji/Rava/Semolina

·       600 ml Beetroot Juice

·       100 gm organic cane jaggery (you can also added sugar)

·       3 tbsp – Ghee

·       1/2 tsp - Fresh Cardamom Powder

·       Hnndfull of dryfruits

 

How to Make

1.     In a pan  heat 2 tbsp ghee and roast sooji/rava until light brown and frangant around 5 minutes in medium flame with continous stirring, remove roated rava in another plate and keep aside.

2.     In the same pan heat 1 tsp ghee add dryfruits and roast until it start to get brown,take out roasted dry fruits and keep aside.

3.     In the same pan add the  beetroot juice  in a  medium flame until beet juice start to boil, keep stirring in regular intervals. It will help to remove the raw odour of thr beetroot.

4.     Let it boil , until it gets  half of quantity.

5.     Add jaggery and mix well and bring it to boil , until the jaggery gets disolved completely.

6.     Add roasted sooji (semolina) mix well and saute for a min in low flame.

7.     Add water if needed.

8.     Cover and cook for 5 minute in low to medium flame, water will be absorb almost by now and looks something like below picture.

9.     Stir well and cook for a 1 to 2 minutes without cover until halwa becomes dry, add cardamom powder, roasted dryfruits and mix well,  turn off the flame.

10.           Remove from heat and when cool enough to handle, roll it on to a greased surface, with a greased rolling pin or hand.

11.           Cut into squre or diamond shaped pieces or as you like.

12.           Serve  at room temputure.
