Mango Malpua- Popular Indian Dessert

Summer are known for the abundance of invigorating fruit recipes that are prepared at home to beat the heat.Mango is one such fruit that is versatile even beyond our imaginaion. There are too many recipes we usualy prepare from mango. But today I want to share one of my fevorite recipe of mango dessert , which is ‘Mango Malpua’. For those who don’t know what ‘Malpua ‘ is- Malpua is a pancake served as a dessert  or a snack originating from the Indian subcontinent. The batter for malpua is normally prepared by flour, and water , milk, coconut,  sometimes crushing ripe bananas also used. Then deep fried in ghee or oil, and served hot after  dipped in sugar  syrup  after they are fried . Now talking about todays recipe here I am using wheat flour and semolina  instated of  refined flour . Besides I am using organic jaggery in place of sugar for making syrup.The main motto behind this  healthy twist is that , so that every body can enjoy it without any guilt. So here the recipe is

Litti-chokha /Baati-chokha




Litti Chokha is a traditional Bihari and Jharkhand dish that is quite similar to Rajasthani Baati but still very different. The litti is the healthy round shaped bread made out of flour made in a traditional oven and is stuffed with sattu and chokha is the side dish made using  roasted eggplant , boiled or roasted potatoes and roasted tomatoes .

For those who don’t know what ‘Sattu ’is ,  sattu which is the roasted channa dal / Bengal gram flour. It is one of the vegetarian sources of protein but unfortunately it is one of those ingredients that has yet not been given its due share for its benefit.

Traditionally Litti is  roasted on hot charcoal or dried cow dung fire. This is the traditional method of roasting litti and the taste of littis made this way is very different. At homes an oven can be used to bake littis. You can use charcoal based open grill for roasting littis. You can even roast them on tawa or fry them in oil.

Here I am using 2nd last method i.e roasted the litties in tawa.Though it makes ‘Littis’  little diffrent from traditional method, still this process is very easy and healthy, anybody can cook litties in their home, besides it does not need any exclusive cooking technique.

Ingredients

 

For Dough

 

  1. 1 cups whole wheat flour 
  2. Salt to taste
  3. 2-3  tablespoon ghee or oil
  4. 1 cup water or add as required
  5. 1/2 teaspoon Carom Seeds
  6.  

For litti stuffing

 

  1. 1 cup sattu (roasted gram flour)
  2. 1 teaspoon mustard oil
  3.  Salt to taste
  4. 1 teaspoon lemon juice
  5. 1/2 handful chopped coriander leaves
  6. 1 teaspoon pickle masala
  7. 1/2 teaspoon grated ginger
  8. 1 chopped green chilli
  9. 1 medium sized onion  finely chopped
  10. 1 to 2 tablespoons of water or as required

For Chokha

 

  1. 1 eggplant/ brinjal
  2. 2-3 medium sized tomato
  3. 1 medium –large size boiled potato
  4. 2 medium sized onion  finely chopped
  5. 3 cloves chopped garlic
  6. 1/2 teaspoon grated ginger
  7. 2-3 chopped green chilli
  8. 1 teaspoon mustard oil
  9. 1 sprig chopped coriander leaves
  10. Salt to taste

 

For Serving


7-8 table spoon ghee.

 

How to make Litti Chokha

 

 

Step 1 How to prepare the dough for Litti

 

  • In a mixing bowl, take 1 cups whole wheat flour and add  salt to taste. Next add 1 tablespoon ghee or oil and then add the 1/2 teaspoon Carom Seeds

  • Now add water in parts and knead to a smooth soft dough.
  • Knead till smooth and soft. Cover the dough and keep aside.

 

Step 2 Preparing the filling of litti

 

  • Take 1 cup sattu/roasted gram flour in a mixing bowl, then add 1 to 2 chopped green chilies, 1/2 teaspoon grated ginger ,1 teaspoon mustard oil , 1 teaspoon lemon juice , 1 teaspoon pickle masala , finely chopped onion , 1/2 handful chopped coriander leaves and salt to taste.
  • Mix very well.
  • Sprinkle 1 to 2 tablespoons water all over and mix the flour with water evenly. Do add more water if required. The sattu stuffing mixture should not be too dry or too wet.
  •  
  • Step 3 stuffing & shaping litti
  •  
  • After 10-15 minutes, now make small or medium sized balls from the dough.
  •  Flatten the the dough ball with your palms and make a shallow cup
  • Place 2 to 3 tablespoons of the stuffing in the center.

  • Gently bring together the outer dough cover in the center, while pressing the stuffing. Join and then seal the edges.
 
  • Step 4  Roast / baking litti 
  • To roast litti, put 1 teaspoon of ghee in a heavy bottom pan and put it to roast. Cover the pan and allow the litti to roast for 5-7 minutes on a low flame. Flip over and cook both sides. cook for approx 20 minutes in total.
  • Continue to cook until the litti turns golden brown from all the sides and cooked from inside.
  • Remove all the littis in a plate.
  • You can also rolled litti in appe pan heated with oil. or preheat and bake in oven at 180 degree celcius for 45 minutes.

 

Step 5 For Baingan ka Chokha

  • Roast the baingan and tomatoes over direct flame until nicely charred.

  • Remove them on a plate and let cool.
  • Remove the skin of the eggplant and tomato, take the boiled potato too and mash them togather nicely.
  • Add all the remaining ingredients and mix well.

Step 6 Serving

  • Finally, litti is ready to serve with chokha and ghee.
  • Transfer the chokha in a serving bowl. Dip the litti balls in some melted ghee and place along with the chokha. Enjoy the bursting flavours of this Bihari delicacy!
