Sattu Paratha is a family member of Indian flat
breads, most popular in theIndian state Bihar. Where it is a kind of staple food. Sattu Ka Paratha is a quick and
easy, yet healthy variant of stuffed Parathas in which Sattu is spiced with
herbs and stuffed into the whole wheat dough, cooked on tawa and served
with curd , pickels, or with Chokha (another traditional recipe from Bihar
).
For those who don’t know what ‘Sattu ’is , sattu which is the roasted channa dal / Bengal gram flour. It is one of
the vegetarian sources of protein but unfortunately it is one of those
ingredients that has yet not been given its due share for its benefit.
However Sattu has some amazing health benefits when
consumed on an empty stomach. It reduces problems associated with your stomach
and flushes out the toxins from the body. Sattu has cooling properties and is
great in providing relief from the scorching heat. It is rich in several nutrients
including fibre, iron, magnesium and sodium. Not just this, there are many
other health benefits of sattu, some of them include:

Ingredients
For
Dough:
- 2 Cups Whole Wheat Flour / Atta
- 1/2 tsp Salt
- 1/2 tsp Carom Seeds
/ Ajwain
- 1 tsp Nigeela Seeds / Kalonji
- 1 tbsp sesame oil (or any other vegetable oil / Ghee
)
- 1/2 Cup Water (or as per need )
For
Sattu Stuffing:
- 1 Cup Sattu
- 1/2 tsp Salt (as per taste )
- 1 Onion , finely chopped
- 1-2 Green Chillies,minced
- 3-4 cloves Garlic,minced
- 1 inch Ginger, grated
- ½
tsp Coriander powder (optional )
- ½ tsp Garam mashala powder (optional )
- 1 tbsp Mustard oil
- 2 tablespoon Coriander Leaves finely
chopped
- 1-1.5 tbsp Mango pickle (mashed) [or 1/2
tsp Lemon juice / 1 tsp Achaar masala ]
- 4-5 tbsp
sesame oil (or any other vegetable oil / Ghee ) for frying the parathas.
How to Make
Prepare
the Dough
- We will knead dough for Paratha first .Take Whole
Wheat Flour in a bowl and add salt, 1/2 tsp Carom Seeds / Ajwain,1 tsp Nigeela Seeds / Kalonji and
add1 tbsp sesame oil or ghee. Mix them
properly Add required amount of water and prepare soft dough. In I have used
almost ½ cup water while kneading.
- Keep the dough aside covered with a wet muslin cloth
or lid for 10 minutes, meanwhile we will
prepare the stuffing.
Prepare the Stuffing:
- In a bowl put sattu. Add salt, ginger garlic paste,
green chilli and other powder spices.
- Now add onion, pickle/lemon juice/ achar masala,
mustard oil and coriander leaves. Mix well together all the stuffing
ingredients and if the mixture feels very dry, sprinkle a little water and mix
well.
Prepare
the Paratha:
- Make 5-6 balls out of the dough for making
paranthas.
- Roll each ball a little. Sprinkle flour over the
rolling board to avoid stickening of dough.
- Spread a little ghee/oil on it and place 2
tablespoons of filling in the middle.
- Cover from all sides and make flat
balls for rolling it again.
- Roll the paratha 1/2 inch thick.
- Heat a tawa/ griddle and put one Paratha on
tawa and cook underside for 30 seconds.
- Change sides
and smear some Oil on Parathas.
- Cook on other side for 30 seconds and change sides
again. Apply Oil on top.
- Gently press at edges until Parathas puff up.
- Cook each
side of the paratha until golden brown, add a few drops of ghee/oil while on
tawa.For better cooking keep the flame low- medium.
- Repeat the process for the rest of the parathas.
- Serve these hot Sattu Paratha with curd and pickle.
