Mango Malpua- Popular Indian Dessert

Summer are known for the abundance of invigorating fruit recipes that are prepared at home to beat the heat.Mango is one such fruit that is versatile even beyond our imaginaion. There are too many recipes we usualy prepare from mango. But today I want to share one of my fevorite recipe of mango dessert , which is ‘Mango Malpua’. For those who don’t know what ‘Malpua ‘ is- Malpua is a pancake served as a dessert  or a snack originating from the Indian subcontinent. The batter for malpua is normally prepared by flour, and water , milk, coconut,  sometimes crushing ripe bananas also used. Then deep fried in ghee or oil, and served hot after  dipped in sugar  syrup  after they are fried . Now talking about todays recipe here I am using wheat flour and semolina  instated of  refined flour . Besides I am using organic jaggery in place of sugar for making syrup.The main motto behind this  healthy twist is that , so that every body can enjoy it without any guilt. So here the recipe is

Ragi Malt -Popular Healthy Millet Beverage

Ragi malt made with ragi flour / Finger Millet flour or sprouted ragi flour, water or milk.it is a healthy and nutrient drink, with high in protein content and rich in minerals, and hence served for babies and diabetics. 

Ragi or Finger Millet is one of most nutritious and healthy cereals. Ragi is a rich source of fiber, calcium, and iron. When it is consumed it is considered to be a great food for weight control, diabetes and cooling the body. Ragi is also gluten-free and highly suitable for those who are lactose intolerant.

Talking about ragi malt it is from  south indian cuisine,served during breakfast.Most interesting part of this recipe is that, it is not only healthy but also delicious ,you can served it to every age group.

There are 2 version of ragi malt prevail in india.One sweeter version and another  savoury version made with salt and bit of spices like pepper. In this recipe, I have shared a sweeter version of ragi malt with jaggery and milk which makes it a refreshing drink and merely 10-15 minutes.

Ingredients:

  1. 2 tbsp ragi flour
  2. 2 cup water
  3. 2 tsp jaggery / as per your taste
  4. ½ cup milk
  5. 2-3 cardamom
  6. 8-10 Almonds
  7. Salt to taste

 

How to make

  • Dry roast Almonds and cardamoms for 2-3  minutes.Then grind everything to a smooth powder. 

  • Next in a bowl take 2 tbsp ragi flour dissolve ragi flour in 1 cup water without forming any lumps. keep aside.

  • Now in a saucepan boil 1 cup water.

  • once the water comes to a boil, add in dissolved ragi flour.

  • Stir continuously keeping the flame on  low to medium.

  • The mixture thickens after 5 minutes and turns glossy and clear after 10 minutes.
  • Further, add 2 tsp jaggery or as per your taste. Mix again very well till all the jaggery gets dissolved. Add some more water if needed.

  • Add salt as per your taste, and mix it well.
  • Now add ½ cup milk and mix on low flame.

  • Then add the almonds and cardamom powder and mix well.

  • Serve ragi malt hot or warm or at room temperature.
