Summer are known for the abundance of invigorating fruit recipes that are prepared at home to beat the heat.Mango is one such fruit that is versatile even beyond our imaginaion. There are too many recipes we usualy prepare from mango. But today I want to share one of my fevorite recipe of mango dessert , which is ‘Mango Malpua’. For those who don’t know what ‘Malpua ‘ is- Malpua is a pancake served as a dessert  or a snack originating from the Indian subcontinent. The batter for malpua is normally prepared by flour, and water , milk, coconut,  sometimes crushing ripe bananas also used. Then deep fried in ghee or oil, and served hot after  dipped in sugar  syrup  after they are fried . Now talking about todays recipe here I am using wheat flour and semolina  instated of  refined flour . Besides I am using organic jaggery in place of sugar for making syrup.The main motto behind this  healthy twist is that , so that every body can enjoy it without any guilt. So here the recipe is

What Is Paneer Bhurji

For those who don’t know what Bhurji is, Bhurji means scrambled so this dish is basically scrambled paneer or indian cottage cheese with spiced mixture made of onions, tomatoes, ginger-garlic paste, green chillies and green coriander leaves.

It is extremely delicious , full of flavour ,tangy dish usually served with roti, chapati , paratha, poori , bread ,pav etc. As a side dish.Interesting things of this recipe is that you can even used this dish as a stuffing in sandwiches and bread rolls etc.

If you are a vegetarian then this is a great way to add protein to your daily diet. Even if you are a non vegetarian you can try this recipe for a change. Trust me it can beats scrambled eggs / Egg Bhurji or Anda Bhurji

If you are a vegan then also no problem , you can also choose this recipe . Just you have to replace the Paneer / cottage cheese by tofu. Rest the procedure is same.

It is perfect for the beginner . It takes merely 10-15 minutes for cooking.Yet it is very very yummy.

Besides it needs no fancy ingredients , so it is also perfet for those who are new to Indian food.



 

Health Benefits of Paneer

Cottage cheese is a dense source of protein. Other than iron, almost all essential minerals like calcium and magnesium are present in cottage cheese.

Cottage cheese is one of the best sources of calcium. Adequate calcium levels ensure healthy bones , teeth, healthy heart muscles and smooth nerve functioning too.

Cottage cheese can help regulate blood sugar levels too. The high protein component of paneer also helps slow release of sugar into the blood and prevents abrupt hike and decline in blood sugar levels.

Cottage cheese can also aid diagestion. Cottage cheese has decent amount of phosphorous which helps in digestion and excretion. The magnesium present in cottage cheese can also prevent constipation.

Ingredients

 

  1. 100-150 gm Paneer
  2. 1 tbsp vegetable oil
  3. 1 tsp cumin seeds
  4. A pinch of asafoetida powder.
  5. 1 medium sized onion, finely chopped
  6. 1-2 green chilli, finely chopped (or as per your taste )
  7. 1 tsp ginger-garlic paste
  8. 1 medium sized tomato, finely chopped
  9. ¼ tsp turmeric powder
  10. ½ tsp kashmiri red chilli powder (for colour )
  11. ½ tsp garam masala powder
  12. ½ tsp coriander powder
  13. salt to taste
  14. 2 tbsp coriander leaves, finely chopped
  15. ½ tbsp lemon juice (optional )

 

How to Make :

  • Crumble 100 to 150 grams paneer (cottage cheese) with your fingers and keep aside. I have used store brought paneer here.
  • Heat oil

  • Add pinch of asafoetida powder. Mixed it well into the oil.
  • After few seconds add the chopped onion, along with chopped green chilies, ginger and garlic paste and stir. Cook for 5 minutes until light browned. You can add a pinch of salt here so that onions cook faster.

  • Now add tomatoes and saute till they turn soft and mushy.

  • Aditionally, add ½ tsp red chilli powder, ½ tsp coriander powder , ¼ tsp turmeric powder , ½ tsp garam masala powder and salt to taste and mix and cook the spices for 30 seconds.

  • Then add the crumbled paneer and mix everything together. Cook the paneer for 2 to 3 minutes.

  • Do not over cook paneer, as they turn hard and chewy.

  • At last add chopped coriander leaves and mix gently.
  • Squeeze in some fresh lemon juice and serve paneer bhurji with paratha, roti
