Mango Malpua- Popular Indian Dessert

Summer are known for the abundance of invigorating fruit recipes that are prepared at home to beat the heat.Mango is one such fruit that is versatile even beyond our imaginaion. There are too many recipes we usualy prepare from mango. But today I want to share one of my fevorite recipe of mango dessert , which is ‘Mango Malpua’. For those who don’t know what ‘Malpua ‘ is- Malpua is a pancake served as a dessert  or a snack originating from the Indian subcontinent. The batter for malpua is normally prepared by flour, and water , milk, coconut,  sometimes crushing ripe bananas also used. Then deep fried in ghee or oil, and served hot after  dipped in sugar  syrup  after they are fried . Now talking about todays recipe here I am using wheat flour and semolina  instated of  refined flour . Besides I am using organic jaggery in place of sugar for making syrup.The main motto behind this  healthy twist is that , so that every body can enjoy it without any guilt. So here the recipe is

Mango Shrikhand

Shrikhand is a traditional Indian sweet made with hung curd and flavored with saffron and cardamom.It is very popular in western Indian states specially in maharashtra.Here I am using mango to flavour the shrikhand.Mango not only adding the natural sweetness to the dish but also adding the extra silky structure in it.

  • Mangoes could help facilitate healthy digestion.mangoes contain enzymes that aid the breakdown and digestion of protein, and also fibre, which keeps the digestive tract working efficiently. Dietary fibre helps lowering risk of heart disease, type 2 diabetes.
  • According to the book 'Healing Foods', mango flesh contains prebiotic dietary fibre, which helps feed good bacteria in the gut.
  • An average sized mango contains upto two-third of the daily recommended intake of vitamin C. The powerful antioxidant helps boost immunity system and prevents cold/flu.

Ingredients:

  1. 300 gm hung curd / Yogurt
  2. 1/2 cup mango puree
  3. 1/2 tsps Cardamom powder
  4. 1/4 cup powder sugar (can use powder brown sugar)
  5. Handful of almonds and cashew nuts , roughly chopped. (optional)

Preparation:

  1. In a bowl take the yogurt.
  2. Mixed the powder sugar and mango puree and the remaning ingredients.
  3. Whisk it nicely to make it a smooth and silky mixture.
  4. Transfered it into serving bowl
  5. .Garnish it as your wish. (I am using mint and raisins for garnishing).
  6. Served chilled as is or with the puries.
