Mango Malpua- Popular Indian Dessert

Summer are known for the abundance of invigorating fruit recipes that are prepared at home to beat the heat.Mango is one such fruit that is versatile even beyond our imaginaion. There are too many recipes we usualy prepare from mango. But today I want to share one of my fevorite recipe of mango dessert , which is ‘Mango Malpua’. For those who don’t know what ‘Malpua ‘ is- Malpua is a pancake served as a dessert  or a snack originating from the Indian subcontinent. The batter for malpua is normally prepared by flour, and water , milk, coconut,  sometimes crushing ripe bananas also used. Then deep fried in ghee or oil, and served hot after  dipped in sugar  syrup  after they are fried . Now talking about todays recipe here I am using wheat flour and semolina  instated of  refined flour . Besides I am using organic jaggery in place of sugar for making syrup.The main motto behind this  healthy twist is that , so that every body can enjoy it without any guilt. So here the recipe is

Curd Daliya

·         Daliya i.e broken wheat is an extremely low-calorie superfood ,high On Fibre. One of the best features of daliya is its high quantity of fibre, which makes it extremly popular food for the people who are in their weight loss journey.

 A bowl ful of daliya has very low glycemic index, which means body digest or absorved it slowly, meaning that it helps in full for longer time , as well as it is rich in Protein. One can consume dalia in breakfast , in lunch as well as dinner.

 There are several method to cook dalia.Here I am sharing my way of cooking dalia with curd. It is extremly healthy, besides super tasty and also super easy even begineer can cook it easily.



Ingredients

  1. 1/2 cup broken wheat/daliya
  2. 1 cups of yogurt
  3. ½ tsp black mustard seeds
  4. ½ tsp cumin seeds/jeera
  5. ½ tsp urad daal
  6. Pinch of hing
  7. 2-3 dried red chillies (cut into bits)
  8. 5-7 curry leaves
  9. salt to taste
  10. 1-2  tsp ghee or oil

 

How to make

  • Boil two cups of water, add salt and pinch of turmeric and add the washed broken wheat to it. This does not take a long time to cook, cover with lid, stirring  it so that it does not stick to the bottom and then turn off the flame. Drain any remaining water and set aside. (if any)
  • After that  cooled it completely and keep aside.
  • Meanwhile whisk the curd well in a bowl making sure there are no lumps. Add little water if required, to get a creamy consistency.
  • Add this curd to the boiled daliya and mix well.
  • Add salt as per your taste. (also can add some black salt)
  • Heat oil / ghee in a pan and add mustard seeds, cumin seeds and let it splutter. Add urad daal and mix until it turns light brown.
  • Add the curry leaves, broken red chillies and hing and fry it untill an aroma comes out. Switch off the heat and let it cool down.
  • Add this to the yogurt daliya and mix well.
  • You can store it in refrigerator about an hour before serving.Or serve it as it is.
